Healthy Chocolate Chip Cupcakes – Sugar Free

If like me you find it hard to get through the day without thinking once (or ten times) about having a chocolate snack then you need to try these. Made using all natural sugars and all natural ingredients you can eat these without feeling guilty and packing on the pounds!

Ingredients

  • 2 Bananas
  • Half a cup fat free greek yogurt
  • 1 Egg
  • 1 Teaspoon vanilla extract
  • 1/2 a cup of honey – When I made these the second time round I ran out of honey so I used 2 tablespoons of sweetener
  • 1 cup oat flour – Or any other flour of your choice (using flours made from healthier sources will make these more nutritious)
  • 2 Tablespoons cacoa powder
  • 1 Teaspoon baking powder
  • 25g dark chocolate chips

Method

  1. Preheat oven to gas mark 4
  2. Place both bananas in a mixer and whisk till completely mushy
  3. Add the greek yogurt, egg, vanilla extract and honey/sweetener and mix until combined
  4. Add in the flour, cacoa and baking powder and mix well
  5. Stir in the chocolate chips and separate between cupcake cases
  6. Cook for 15-20 minutes or until the knife appears clean when pierced
  7. ENJOY!
